I look forward to this time of year and I can’t believe I almost forgot to share my most favorite holiday treat: my yummy microwaved moist and gooey cup of cake.
Ingredients:
Ivy-the-pie-baker and Mr. Dinwiddie, Simpich elf characters, really enjoy this event.
You’re going to need:
- 4 tablespoons flour
- 4 tablespoons sugar
- 2 tablespoons cocoa
- 1 egg
- 3 tablespoons milk
- 3 tablespoons oil
- 3 tablespoons chocolate chips (optional—–but I don’t think they’re optional!!)
- small spash of vanilla extract
- splash of Kahlua optional
- 1 large coffee mug
Measure your ingredients right into a small bowl and mix them up.
Spray the inside of your cup with “Pam” (or some oily equivalent) before pouring in the mixture .
Pop it into the microwave. I cooked mine for 3 minutes since we’re in the mountains at 4600 feet. Next time I’d go for 2 minutes, 45 seconds and check it out. Adjust your time accordingly. I think I’d start at 2 minutes, 30-45 seconds at sea level.
Corinna, from ‘down under’ decided to give my recipe a go and here is her tip: She has a 1200 watt microwave and cooked it for 2.5 minutes. Then she served it with a warm homemade choccy sauce and strawberries. Hubby and daughter loved it!
The only thing that I would do differently with this yummmmmmmmy cup of cake is to add some Kahlua (like 1 tablespoon) for a tad more moisture AND flavor. I might use a slightly smaller cup too, but I wanted to be sure it was large enough for this trial run/photo shoot.

I’d say this project took 10 minutes from ingredients-in-cupboards to cake-in-mouth. Talk about instant gratification. 🙂
